Finnish Baked Pancakes

A thick, oven-baked Finnish pancake cut into squares and served with jam or lingonberry.

1 q. Rich Milk
1 tsp. Flour
1 1/4 C. Flour
4 Eggs, beaten separately
2 tbsp. Butter

Pannukakku

Ad milk, salt, and flour into beaten egg yolks. Melt the butter in the pan you use to bake in. Pour the melted butter into the mixture. Lastly, add the stiffly beaten egg whites. Bale in a moderately hot oven for 45 minutes. Serve with syrup or jelly. Excellent with coffee.
